Does Syncfusion have any custom filter options such as having an input field to type in your own query or a filter builder to filter the entire data source rather than per column?

You can achieve your requirement by doing search action in Grid component which will search for the given key with entire dataSource. Please refer to the below Documentation link and demo link for more information.
